Edible Ojai – an interview with Ben about baking – by Quin Shakra

I think Quin Shakra (of the great local Mano Farm and organic seed company All Good Things Organic Seeds) did a wonderful job on this interview with me – in the current (Summer 2013) issue of Edible Ojai & Ventura County magazine. He and photographer Tanja Korvenmaa spent much of a Saturday afternoon and evening documenting my weekly bread baking and discussing the multiple stages of creating and baking sourdough bread.

I worked with my father for many years in the family baking business in Brooklyn, NY, where he taught me the complexities of yeast-raised dough, sour-doughs, Danish, coffee cakes, puff paste, choux paste, etc., as well as an array of Italian, French and other European breads.
